Crockpot Mexican Pulled Pork

A delicious recipe for tender and flavorful Mexican pulled pork made in a crockpot.

Ingredients

  • 3 pounds pork shoulder
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup salsa
  • 1/4 cup lime juice

Instructions

  1. In a small bowl, mix together the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Rub the spice mixture all over the pork shoulder.
  3. Place the pork in the crockpot and add the salsa and lime juice on top.
  4. Cover and cook on low for 8-10 hours or until the pork is tender and easily shreds with a fork.
  5. Shred the pork and mix it with the juices in the crockpot before serving.

Notes

  • This pulled pork can be served in tacos, on sandwiches, or over rice.
  • Adjust the spice level by using hotter salsa or adding jalapeños.
