Crockpot Lasagna Soup

A warm and hearty Crockpot Lasagna Soup that combines all the flavors of traditional lasagna in a comforting soup form.

  • 1 pound ground beef
  • 1 pound Italian sausage
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 can (28 ounces) crushed tomatoes
  • 6 cups beef broth
  • 2 cups lasagna noodles broken
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large skillet, brown the ground beef and sausage over medium heat. Drain excess fat.
  2. Transfer the meat to a slow cooker and add onion, garlic, crushed tomatoes, beef broth, Italian seasoning, salt, and pepper. Stir to combine.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. During the last 30 minutes of cooking, add the broken lasagna noodles.
  5. Stir in ricotta cheese and mozzarella cheese just before serving.
  6. Top each bowl with grated Parmesan cheese.

Notes

  • For extra flavor, you can add fresh basil before serving.
  • If you prefer a vegetarian version, substitute the meat with vegetables like zucchini and bell peppers.
