4 fillets white fish such as cod or haddock
1 cup all-purpose flour
2 eggs
1 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 cup dill pickle juice
1/2 cup mayonnaise
2 tablespoons chopped fresh dill
4 sandwich buns
1 cup shredded lettuce
Instructions
Prepare the tartar sauce by mixing mayonnaise, dill pickle juice, and chopped dill in a bowl. Set aside.
In a bowl, mix flour, salt, pepper, and paprika.
Dip fish fillets first in flour mixture, then in beaten eggs, and finally coat with breadcrumbs.
Heat oil in a skillet over medium heat. Fry fish until golden and crispy, about 4-5 minutes per side.
Assemble the sandwich by placing a piece of fish on the bottom half of the bun, topping with shredded lettuce and dill pickle tartar sauce, and finally topping with the other half of the bun.
Notes
For extra crunch, double-coat the fish with breadcrumbs.
Use any white fish of your choice for this recipe.
