  • 2 cloves garlic, minced
  • 2 large potatoes, diced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic; sauté until onion is translucent.
  3. Add potatoes and corn; stir to combine.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer until potatoes are soft.
  6. Stir in coconut milk and smoked paprika; season with salt and pepper.
  7. Blend the chowder until smooth, if desired.
