Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned, breaking it apart with a spoon.
  2. Add the olive oil and minced garlic, sautéing for about 1 minute until fragrant.
  3. Stir in the rigatoni and pour in enough water to cover the pasta; bring to a boil.
  4. Reduce the heat and simmer for about 12 minutes, stirring occasionally until the pasta is al dente.
  5. Mix in the heavy cream and grated Parmesan cheese until well combined.
  6. Add the fresh spinach and cook until wilted.
