  • 1 bulb garlic
  • 4 cups diced tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Remove the outer layers of the garlic bulb, cut off the top, and drizzle with olive oil.
  3. Wrap the garlic in foil and roast for 30 minutes.
  4. In a pot, combine the diced tomatoes, vegetable broth, salt, and pepper. Bring to a simmer.
  5. Once the garlic is roasted, squeeze the cloves into the pot and stir in the heavy cream.
  6. Blend the soup until smooth.
  7. Serve hot, garnished with fresh basil.
