- 4 slices turkey bacon
- 1 tablespoon miso paste
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 green onions, sliced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt to taste
- Cook udon noodles according to package instructions, then set aside.
- In a large pot, cook the turkey bacon until crispy. Remove and chop.
- In the same pot, add garlic and ginger, sautéing until fragrant.
- Add vegetable broth, miso paste, and coconut milk; stir until well combined.
