A rich and indulgent creamy miso udon soup featuring a savory twist of turkey bacon, perfect for a comforting meal.

  • 2 cups udon noodles
  • 4 slices turkey bacon
  • 1 tablespoon miso paste
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green onions, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt to taste

Instructions

  1. Cook udon noodles according to package instructions, then set aside.
  2. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  3. In the same pot, add garlic and ginger, sautéing until fragrant.
  4. Add vegetable broth, miso paste, and coconut milk; stir until well combined.
  5. Bring to a simmer and then add soy sauce and sesame oil.
  6. Fold in cooked udon and the chopped turkey bacon.
  7. Garnish with green onions before serving.

Notes

  • Can substitute turkey bacon with regular bacon or omit for a vegetarian version.
