Creamy Miso Udon Soup

  • 200 grams udon noodles
  • 1 tablespoon miso paste
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon soy sauce

  • 1 green onion, chopped
  • 1 cup mixed vegetables (carrots, bell peppers, bok choy)

Instructions

  1. Cook udon noodles according to package instructions. Drain and set aside.
  2. In a pot, combine vegetable broth, coconut milk, miso paste, soy sauce, and sesame oil over medium heat.
  3. Stir until the miso paste is fully dissolved.
  4. Add mixed vegetables and simmer for 5-7 minutes until tender.
  5. Add cooked udon noodles to the pot and heat through.
  6. Serve hot, garnished with chopped green onions.
