Creamy Lemon and Herb Pot Roasted Chicken

  • 1 whole chicken
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 lemon, zested and juiced
  • 1 cup chicken broth
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, heat olive oil over medium heat.
  3. Season the chicken with salt, pepper, rosemary, thyme, and lemon zest.
  4. Brown the chicken on all sides in the pot.
  5. Add the lemon juice, chicken broth, and cream
  6. Cover and roast in the preheated oven for about 1 hour and 20 minutes, or until the chicken is cooked through.

  • For more flavor, marinate the chicken in the herb mixture overnight.
