Creamy Beet Soup with Coconut, Ginger and Lime

Ingredients

  • 4 medium beets, peeled and cubed
  • 1 can coconut milk
  • 1 tablespoon fresh ginger, grated
  • 1 lime, juiced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
  2. Add the minced garlic and grated ginger, cooking for an additional minute.
  3. Stir in the cubed beets and cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer until the beets are tender, about 20 minutes.
  5. Remove from heat and add the coconut milk and lime juice. Use an immersion blender to puree the soup until smooth.
  6. Season with salt to taste, and serve garnished with fresh cilantro.

Notes

  • This soup can be kept in the fridge for up to 5 days.
  • For a spicier kick, add a pinch of red pepper flakes while cooking.
