Coconut Rum (Coquito) Tiramisu

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup brewed coffee, cooled
  • 1/2 cup coconut rum
  • 24 ladyfinger cookies
  • 1/4 cup shredded coconut, toasted

Instructions

  1. In a large bowl, whisk together the mascarpone cheese, heavy cream, and powdered sugar until soft peaks form.
  2. In a separate bowl, combine the brewed coffee and coconut rum.
  3. Dip each ladyfinger into the coffee mixture, then layer them in a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Repeat with another layer of dipped ladyfingers and top with the remaining mascarpone mixture.
  6. Sprinkle toasted coconut on top and refrigerate for at least 4 hours before serving.
