  • 200 grams rice noodles
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 400 ml coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 bell pepper, sliced
  • 1 cup spinach
  • 1 lime, juiced

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large pot, heat the coconut oil over medium heat.
  3. Add the onion, garlic, and ginger, sautéing until the onion is translucent.
  4. Stir in the red curry paste and cook for another minute.
  5. Pour in the coconut milk and vegetable broth, then bring to a boil.
  6. Add the soy sauce, bell pepper, and spinach, cooking until the spinach wilts.
  7. Squeeze in the lime juice, then add the cooked noodles and stir to combine.
  8. Serve warm in bowls, garnished with fresh herbs if desired.

Notes

  • For a spicier dish, add more red curry paste.
