Coconut Cream Pancakes

Delicious and fluffy coconut cream pancakes served with crispy turkey bacon.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup coconut milk
  • 1/4 cup shredded coconut
  • 1 large egg
  • 2 tablespoons melted coconut oil
  • 4 slices turkey bacon

Instructions

  1. In a large bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, combine coconut milk, shredded coconut, egg, and melted coconut oil.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour batter onto the skillet, forming pancakes of desired size.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Meanwhile, cook turkey bacon in a separate pan until crispy.
  8. Serve pancakes hot with crispy turkey bacon on the side.

Notes

  • For extra coconut flavor, use coconut oil for greasing the skillet.
  • Top with more shredded coconut if desired.
