  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup cinnamon sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, mix the pumpkin puree, sugar, vegetable oil, eggs, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fill the muffin cups ¾ full with the batter.
  6. Sprinkle the cinnamon sugar mixture on top of each muffin.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack.

Notes

  • For added flavor, you can mix in chocolate chips or nuts.
  • Ensure not to overmix the batter for fluffy muffins.
