2 cups all-purpose flour
4 large eggs
2 1/2 cups whole milk
1/2 cup unsweetened cocoa powder
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup bourbon
2 cups whipped cream
Instructions
In a mixing bowl, combine flour, eggs, milk, cocoa powder, sugar, melted butter, and vanilla extract. Mix until smooth.
Heat a non-stick skillet over medium heat. Pour a ladle of batter into the skillet and swirl to coat the bottom. Cook until the edges lift, then flip and cook for another minute.
Repeat until all batter is used, stacking the crêpes on a plate.
To assemble, layer crêpes with whipped cream and drizzle bourbon between layers.
Chill in the refrigerator for at least 2 hours before serving.
Notes
For a boozier flavor, increase the bourbon in the filling.
Ensure the crêpes are completely cooled before assembly to prevent sogginess.
