  • 4 cups chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 1/4 cup parsley, chopped
  • Green onions for garnish

Instructions

  1. In a large pot, cook the chicken over medium heat until browned, then remove and set aside.
  2. Add onion, bell pepper, celery, and garlic to the pot; sauté until tender.
  3. Stir in the flour, cooking for 2-3 minutes until it turns a light brown color.
  4. Add chicken broth, tomato paste, and Cajun seasoning; stir to combine.
  5. Return the chicken to the pot and simmer for about 30 minutes.
  6. Season with salt and pepper, and stir in chopped parsley before serving.
