1 pound ground beef
1 cup shredded mozzarella cheese
1/2 cup breadcrumbs
1 egg
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
8 cups chicken broth
2 cups tortellini
1 cup chopped spinach
1/2 cup grated Parmesan cheese
Instructions
In a bowl, combine ground beef, mozzarella cheese, breadcrumbs, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until combined and form into small meatballs.
In a large pot, bring chicken broth to a boil.
Gently add the meatballs to the boiling broth and cook for 10 minutes.
Add tortellini and cook according to package instructions until tender.
Stir in chopped spinach and Parmesan cheese until melted and well combined.
Serve hot and enjoy!
Notes
For extra creaminess, add a splash of heavy cream before serving.
Feel free to use frozen tortellini for convenience.
