Cheesy Asparagus Orzotto

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound asparagus, trimmed and cut into pieces
  • 1 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat and sauté the onion until translucent.
  2. Add garlic and asparagus, cooking until asparagus is tender.
  3. Stir in the orzo and vegetable broth, bringing to a boil.
  4. Reduce heat and simmer until the orzo is cooked and the liquid is absorbed, about 10 minutes.
  5. Remove from heat and stir in Parmesan cheese until melted and creamy.
  6. Season with salt and pepper to taste before serving.
