2 boneless, skinless chicken breasts
12 ounces pasta (such as fettuccine or penne)
1 tablespoon Cajun seasoning
1 tablespoon olive oil
1 cup heavy cream
1 cup diced tomatoes
1 cup bell peppers, diced
1/2 cup onion, diced
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Cook pasta according to package instructions until al dente; drain and set aside.
In a skillet, heat olive oil over medium heat and add chicken. Season with Cajun seasoning, salt, and pepper.
Cook the chicken for about 6-7 minutes on each side or until fully cooked.
Remove the chicken and slice it into strips.
In the same skillet, add garlic, onion, and bell peppers and sauté until softened.
Add diced tomatoes and heavy cream; bring to a simmer.
Add the cooked pasta and sliced chicken to the sauce, stirring well to combine.
Sprinkle with Parmesan cheese and let it melt for a minute.
Garnish with fresh parsley before serving.
Notes
Adjust the spice level by increasing or decreasing the Cajun seasoning.
