1 head green cabbage
4 slices turkey bacon
1 cup chicken ham, diced
1 large onion, chopped
2 carrots, sliced
4 cloves garlic, minced
8 cups vegetable broth
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon oregano
2 bay leaves
1 tablespoon olive oil
Instructions
In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
Remove the bacon and set aside. In the same pot, add onions and carrots and sauté until softened.
Add garlic and cook for 1 minute, then add the chopped cabbage, turkey bacon, chicken ham, vegetable broth, black pepper, salt, oregano, and bay leaves.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Remove bay leaves and serve hot.
Notes
For a spicier soup, add red pepper flakes.
Top with fresh herbs for extra flavor.
