Bruschetta Pasta Salad

A refreshing and easy Bruschetta Pasta Salad featuring turkey bacon.

Ingredients

  • 8 ounces pasta of your choice
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a skillet, cook turkey bacon until crisp, then chop into pieces.
  3. In a large bowl, combine the pasta, cherry tomatoes, basil, and turkey bacon.
  4. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Serve chilled or at room temperature.

Notes

  • For a vegetarian option, omit turkey bacon.
  • Can be made ahead of time and stored in the refrigerator.
