A delicious and nutritious breakfast option featuring sweet potatoes, turkey bacon, and a variety of colorful vegetables.

Ingredients

  • 2 medium sweet potatoes
  • 4 slices turkey bacon
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 2 cups spinach
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Poke holes in the sweet potatoes with a fork and bake for 45 minutes or until tender.
  3. While the sweet potatoes are baking, cook the turkey bacon in a skillet over medium heat until crispy. Remove and set aside.
  4. In the same skillet, add olive oil, onion, and bell pepper. Sauté until softened.
  5. Add spinach and cook until wilted. Season with salt and pepper.
  6. Once sweet potatoes are cooked, slice them open and fill with the bacon and veggie mixture.
  7. Serve warm and enjoy!
