Bourbon Peach Roasted Salmon

A deliciously unique twist on salmon, combining the sweet flavor of peaches with a hint of bourbon.

  • 1 cup fresh peaches, diced
  • 1/4 cup bourbon
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the diced peaches, bourbon, brown sugar, cinnamon, and olive oil.
  3. Place the salmon fillets on a baking sheet and season with salt and pepper.
  4. Spoon the peach mixture evenly over the salmon.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through.
