BBQ Chicken Skewer Salad

A delicious and healthy BBQ Chicken Skewer Salad that’s easy to make and full of flavor!

Ingredients

  • 2 cups mixed salad greens
  • 1 pound grilled chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup BBQ sauce
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Prepare the skewers by threading the diced chicken and cherry tomatoes onto them.
  2. Preheat the grill to medium heat and cook the skewers for about 10 minutes, turning occasionally.
  3. In a large bowl, combine the mixed salad greens, cucumber, red onion, and feta cheese.
  4. Drizzle the BBQ sauce over the salad and toss to combine.
  5. Once the skewers are cooked, remove them from the grill and let them cool slightly before serving over the salad.

Notes

  • For a spicy kick, add jalapeños to the skewers.
  • Can be served with additional BBQ sauce on the side.
