  • 2 cups crushed pistachios
  • 1 cup graham cracker crumbs
  • 1/2 cup melted butter
  • 3 packages (8 oz) cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup honey
  • 1 tsp ground cinnamon
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine crushed pistachios and graham cracker crumbs with melted butter.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract, honey, and ground cinnamon until well combined.
  7. Pour the cheesecake filling over the crust in the springform pan.
  8. Bake for 50-60 minutes or until the center is set.
  9. Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
  10. Top with chopped walnuts and additional honey before serving.

Notes

  • Best served chilled.
