Baked Potato Chicken and Broccoli Casserole

A comforting casserole that combines tender chicken, fluffy baked potatoes, and nutritious broccoli.

Ingredients

  • 2 large baked potatoes, diced
  • 1 pound cooked chicken, shredded
  • 2 cups broccoli florets
  • 1 cup cheddar cheese, shredded
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the diced baked potatoes, shredded chicken, broccoli, and half of the cheddar cheese.
  3. In another bowl, mix the cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  4. Pour the soup mixture over the chicken and vegetable mixture and stir until well combined.
  5. Transfer the mixture to a greased baking dish and top with the remaining cheddar cheese.
  6. Bake for 30-40 minutes, or until heated through and bubbly.

Notes

  • For extra flavor, add some spices or herbs of your choice.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
