Ingredients

  • 1 pound chicken breasts
  • 4 cups chicken broth
  • 2 cups water
  • 1 tablespoon soy sauce
  • 2 teaspoons ginger, minced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup bok choy, chopped
  • 8 ounces rice noodles
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • 1 tablespoon cilantro, chopped

Instructions

  1. In a large pot, heat sesame oil over medium heat.
  2. Add ginger and garlic, sauté until fragrant.
  3. Pour in chicken broth and water, then add chicken breasts.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove chicken, shred it, and return to the pot.
  6. Add carrots and bok choy, cook until tender.
  7. Meanwhile, cook rice noodles according to package instructions.
  8. Serve soup over noodles and garnish with green onions and cilantro.

Notes

  • For extra flavor, add a splash of lime juice before serving.
